The new stage of ‘Nostre’ includes a new menu and the launch of the ‘Àvia Menu’, the most affordable option for everyday diners. Andrés Rengel and Sara Forner, owners of Nostre have moved from the Central Market to the upmarket Aragón area of Valencia, specifically to Calle Doctor Ferran, 6, 2.3 kilometres from their original location. In this new phase, the two young restaurateurs are going back to the origins – working with traditional recipes – but they are also proposing some novelties, such as the Àvia Menu, the most affordable option for discovering Nostre’s cuisine and a new menu, which invites diners to create their own gastronomic experience.
THE NEW MENU
Nostre’s new menu is designed to allow customers to personalise their dining experience. The idea is that everyone can create their own tasting menu, based on a series of proposed dishes. In this way, diners are invited to design their own journey through Nostre’s cuisine. “In the end, we can tell our story, but we also want the diners to tell us theirs”, explains Andrés Rengel about this decision. This new proposal will include some of the house’s representative references, also available on the menus, such as its travelling all i pebre, a recipe based on a local classic and incorporating ingredients such as coriander gnocchi, spices, turbot blanquet, or the final -and optional- touch…and only for those who want to travel to Peru: lime. Also, the restaurant will also incorporate recipes from the first Nostre and newly created dishes such as:
Red prawn omelette, Nantua sauce of manteca colorá and yuzu kosho, one of the dishes imported from the original ‘Nostre’ restaurant. It is, therefore, one of Nostre’s most representative dishes and a tribute to Andrés’s beginnings.
You can also savour Crab ravioli a la Donostiarra, crab suquet a la manzanilla pasada and soft-shell crab. Here the intense flavour of the Mediterranean and different culinary techniques from the Basque and Italian gastronomies are fused together.
A distinctive dish is their Gamo a la royal, accompanied by roasted loin, beetroot, plums (umeboshi) with Grand Veneur sauce. ‘Nostre’ is one of the few establishments in Valencia that continues to work with game, a practice that is becoming less and less frequent in contemporary restaurants, with seasonal dishes such as this fallow deer a la royal.
‘Maestrazgo’ cheesecake is a dessert and another of the dishes from the first Nostre. In this case, it is presented in limited edition format, so only a few units will be available each day.
THE ÀVIA MENU
On the other hand, Nostre also incorporates a new proposal to its tasting menus, which offer different lengths. This is the Àvia Menu, the executive menu of the house, available from Wednesday to Friday at lunchtime, for a price of 22.50 €. This proposal aims to offer a more affordable experience, but without sacrificing quality or the essence of Nostre. Thus, diners will be able to enjoy two appetizers, two starters, a main course and a dessert, which will change weekly. In addition to the Àvia Menu, Nostre also has the ‘Opportunity Menu’, for €75, and the most extensive of all, the ‘Origin Menu’, which costs €90.
We mentioned at the beginning all those paths that are drawn before a new stage. Undoubtedly, for Andrés and Sara, the road ahead is long. We are talking about two young people who, despite having a remarkable career behind them, have a long – and promising – future ahead of them, full of successes and learning that will forge their personalities. However, there is one thing that, in their case, remains unshakeable: perseverance, enthusiasm, good sense and respect for the cuisine. It is that which puts the product and the legacy at the centre of the table, by cooperating with small producers and winegrowers, who share their commitment to sustainability and craftsmanship.
Because if there is one thing that Andrés and Sara are clear about, it is that ‘Nostre’ is a reflection of their roots, a fusion of ancestral techniques and contemporary flavours, honouring the past while looking to the future.
