Valencia’s culinary heartbeat resonated at the 10th Premis Cacau d’Or, where Grupo Gastro Trinquet achieved an unprecedented milestone, clinching its second consecutive award. The event, held at the historic Centre Cultural La Beneficència, celebrated the enduring tradition of ‘esmorzar’—a Valencian mid-morning ritual steeped in cultural pride and gastronomic flair.  ‘Casa Baldo 1915’, Grupo Gastro Trinquet’s emblematic eatery, claimed the spotlight with its prize-winning sandwich, a masterful fusion of free-range chicken, sobrasada-infused omelette, molten Brie, and an aromatic honeyed aioli, all encased in artisan bread. This winning creation was described by judges as a harmonious blend of simplicity and sophistication, with flavours that pay homage to Valencia’s culinary roots while embracing modern creativity.  

 Chef Pablo Margós, the visionary behind the dish, shared his inspiration: a beloved bocadillo from his student days in Cheste. His reinterpretation elevated humble ingredients into a gourmet experience, a testament to Valencia’s ability to honour its heritage while innovating for the future.  

 Judges like Paco Alonso, a cultural advocate, praised the sandwich for its “precision, bold flavour, and impeccable craftsmanship,” spotlighting Casa Baldo’s meticulous approach to both cuisine and presentation. Beyond the food, Casa Baldo’s nostalgic ambiance—a vibrant mix of history and forward-thinking design—echoes the spirit of Valencia itself.  

 Grupo Gastro Trinquet’s triumph represents more than culinary excellence; it’s a reaffirmation of Valencian identity. By revitalizing *esmorzar* culture, establishments like Pelayo and Vaqueta bridge tradition and modernity, offering an authentic yet contemporary dining experience that continues to captivate locals and visitors alike.
