GLOBAL FLAVOUR…LOCAL PRODUCE

Under the slogan “Global flavour, local produce”, the Pangean Essence project consists of an international gastronomic and cultural exchange that aims to promote sustainable, quality, local produce.With the endorsement of the National Federation of Fishermen’s Guilds (FNCP) brand “Seafood and fish from Spain” and the Valencian quality seal “Molt de Gust”. This will all be presented on Sunday 13 November at the ‘Mediterránea Gastrónoma’ Fair at ‘Feria Valencia.’

It has the institutional support of the Department of Agriculture, Rural Development, Climate Emergency and Ecological Transition of the Generalitat Valenciana, the FNCP and the Kiwa UPV Chair. The project will also involve Ulises Menezo, businessman of the catering industry and ambassador of Japanese culture in Spain; and the master rice cook Raúl Magraner.

The first edition of the project will focus on Japan. Between January and September 2023, its gastronomic culture will travel around Spain, preparing its most representative dishes with quality Spanish products endorsed by “Pescados y mariscos de España” and the “Molt de Gust” brand of the Comunitat Valenciana.

After this visit, a Valencian expedition will take our flavour and culture to the Asian country from September to November 2023. Local, sustainable Japanese produce will be used in the preparations.

In fact, all the products comply with the Sustainable Development Goals. The multinational certifier Kiwa will carry out all the traceability of the project to ensure that all the food used complies with all the sustainability and zero-kilometre objectives. To do so, it will evaluate them with its ‘foODS’ tool that measures and quantifies the contribution of the agri-food industry to the SDGs.
