QUIQUE DACOSTA OPENS ‘FLORES RARAS’ RESTAURANT IN VALENCIA

The 2-Michelin-starred restaurant formerly known as ‘El Poblet’ in Valencia begins a new chapter under the name Flores Raras, with Carolina Álvarez as head chef. The ‘Flores Raras’ restaurant opens its doors on Wednesday, January 28, marking the beginning of a new phase as a natural evolution of the gastronomic concept developed until now under the name El Poblet (two Michelin stars), maintaining intact the values, standards, and culinary identity that have defined its trajectory since 2012. The name change reflects the desire to represent the restaurant’s current state, a consolidated and constantly evolving project that looks to the future from the solid foundation of what has been built.

Located in the same space, at C/ Correos, 8,  in the city centre, the restaurant remains under the ownership and management of Quique Dacosta, guaranteeing the continuity of the gastronomic approach, the standards of quality and excellence, and the vision that has guided the project since its opening.

In this new phase, Carolina Álvarez takes over as head chef: “Cooking in Valencia is a responsibility that fills me with immense excitement. I arrived in this city almost two decades ago and fell in love with it and its people.” After six years as head chef at Quique Dacosta Restaurante in Dénia and several more years as part of the creative team, Carolina brings a deep understanding of the restaurant’s culinary philosophy.

Her arrival is the result of an organic and coherent process, aligned with the path already taken and ensuring continuity in the way the cuisine, the product, and the customer experience are understood. She is supported by a solid and attentive front-of-house team, orchestrated by Delia Claure, and a carefully curated wine cellar under the direction of Hernán Menno. Together they consolidate this restaurant as one of the most interesting and relevant fine dining establishments in Valencia.

In this way, ‘Flores Raras’ reaffirms its commitment to a cuisine with a distinct, precise, and contemporary identity. For Quique Dacosta, this stage represents “an affirmation of the project, which evolves from experience and maturity. Flores Raras continues to develop a cuisine that defines our DNA, focused on knowledge of the product, the environment, and technique, understood as a tool at the service of flavour and emotion,” the chef stated.

About Carolina Álvarez

Carolina Álvarez (Mexico, 1988) was one of the head chefs at Quique Dacosta Restaurante for six years, forming part of the creative team of the only restaurant in the Valencian Community awarded three Michelin stars. Through her work, she has helped position the restaurant among the best in the world. She has been recognized as Best Female Chef of the Year by the Royal Academy of Gastronomy of the Valencian Community. She has worked for over 15 years with the Quique Dacosta group, and with her talent, dedication, effort, and executive skills, she has become a cornerstone of one of the most influential and established gastronomic projects in the world.

Quique Dacosta is a Spanish chef with three Michelin stars and recognized as one of the best chefs in the world. His artistic ability in the kitchen and the beauty of his dishes have led him to be awarded the Gold Medal for Merit in Fine Arts.
