Popular local restaurant Sibarita has opened its first permanent location in Calle Serpis, expanding its presence in the Valencian gastronomic scene. The new location aims to create a relaxed dining experience while maintaining the brand’s focus on providing high quality, traditional Valencian dishes. Sibarita has already made its mark on the Valencian culinary scene, its first location opened in early 2023 and it now boasts three locations, with locations in ‘Mercader Cabanyal’ and ‘Mercado de la Imprenta’.
The Menu
Known for their gourmet croquettes and signature Spanish tortillas (omelettes), in fact, they earned second place in Spain’s “The Best Tortilla” competition last October and “The Best Croquette” in Valencia too!
The menu also features:
- Croquettes with flavours like Iberian ham, cured beef & parmesan, beef cheek & mushrooms, and red prawn.
- Tortillas, including carbonara, truffle, sobrasada, and “blanc i negre” (black & white sausage).
- Seasonal dishes like bravas Sibarita, broken eggs with ham, and grilled pork ear.
Everything is made fresh, using high-quality ingredients. Co-owner and head chef Miguel Álvarez notes, “We respect traditional flavours but always add a touch of creativity.”
A Space for Community
CEO of Sibarita, Iván Fernández, described the location as “a place where we could do what we love without restrictions—where we have full control over quality, service, and the overall experience.” The new location also allows for the space to be used for wine pairings, group menus, and a focus on traditional Valencian almuerzos (mid-morning meals).
This results in an intimate but modern space that holds up to 54 guests and can cater to the different needs of the community throughout the day.
Future Plans
Looking ahead, Sibarita hints at a future expansion across the Valencian Community and possibly to Madrid. However, for now they are focused on their current location and perfecting their craft.

24/7 VALENCIA: Can you tell us something about your culinary team at Sibarita?
IVÁN FERNÁNDEZ: “Our executive chef trained at the ‘Escuela de hostelería de la Casa de Campo’, one of the best in Spain.”
24/7 VALENCIA: What is the concept of ‘Sibarita’?
IVÁN FERNÁNDEZ: “It is all about high-quality traditional dishes at sustained prices. It is where everyone and everything feels good.”
24/7 VALENCIA: Can you tell us about your award-winning omelette?
IVÁN FERNÁNDEZ: “The fruit of a lot of hard work and a lot of tortillas. We believe it is the perfect blend of high quality potatoes with the best eggs and yolks. The point of the omelette must be exact, neither liquid nor solid… like a cream ;)”
24/7 VALENCIA: Your croquettes are legendary and won the first prize as the best croquettes in Valencia. Please tell us more ….
IVÁN FERNÁNDEZ: “The winner was the oxtail with Pedro Ximenez, it is a croquette which the stew inside is mixed with béchamel sauce and is cooked for more than 6 hours over low heat. It requires a lot of work and time, and of course, it has been noticed. Indeed, we were the most voted and the winners of this year’s edition!”
