Los Gómez, the tavern reviving Valencian spoon dishes (exclusive report)

Arròs amb fesols i naps, the velvety seafood rice and the classic Valencian puchero take centre stage in the group’s seasonal offering, which champions the local recipes that have always been served at this time of year. Last season, more than 4,000 diners tried the puchero, the restaurant’s signature spoon dish and emblem of traditional Valencian cooking. Here, we explore a sampling of the winter dishes at Los Gómez Taberna.

Everything comes back around, but someone has to bring it back. In Valencia, Los Gómez is leading the revival of Valencian spoon dishes: the ones that have always been eaten at grandmother’s house, like a good arròs amb fesols i naps or the classic Sunday Valencian puchero. The gastronomic group, one of the most prominent in the city, has its own grandmother: Amparo Tamarit, who, together with her husband Paco, laid the first stone in 1989 of what is today Grupo Los Gómez.

The winter menu at Los Gómez Taberna, available at its three locations, bears Amparo’s signature. Classic dishes that feel new again from these days onward, reviving and celebrating the spoon dishes that have always been cooked in Valencia, drawing on the produce of the orchards and the Albufera, the foundations of the area’s home cooking and traditional preparations. Los Gómez is the quintessential Valencian tavern: cozy and with an extensive menu. For the current autumn season and, soon, winter, the restaurant already has its new dishes, among which the verdinas with clams and prawns and the stewed lentils stand out. Yet the most in-demand of all is the Valencian puchero. As proof of its success, last season 4,630 people visited the restaurant to try this dish. It is also worth noting that Los Gómez offers a special Valencian puchero menu. The Valencian puchero is the most representative dish of Valencian spoon cooking.

In short, these are Los Gómez’s winter dishes:
Valencian puchero in two servings: noodle and vegetable soup, chickpeas and meat
Oxtail with truffle sauce
Puchero canelones
Arròs amb fesols i naps
Roasted pork knuckle in its own juices with straw potatoes and flame-grilled Palermo peppers
Grandma Amparo’s stewed lentils with chorizo and Iberian ham
Verdinas with clams and prawns slowly braised in seafood stock
Velvety seafood rice with rockfish

Toni Carceller, marketing director of Grupo Los Gómez, notes that the winter menu “is a reflection of our grandmothers’ cooking.” He gives the lentils as an example: “It’s a dish that has always existed, but its long and complex preparation doesn’t allow people to cook it at home the way our grandmothers did, which is why we want to offer it in our restaurants. We aim to create that necessary pause in everyday life through our gastronomy.”

Part of the produce used to prepare the winter dishes is grown in the Grupo Los Gómez family orchard. In early 2025, Los Gómez acquired some 35 hanegadas, establishing its own garden in La Pobla de Farnals. The last harvest yielded up to 20,000 kilos of artichokes and another 5,000 of oranges, among other products. Although Los Gómez Taberna, with its three locations (Correos, San Vicente and La Pobla de Farnals), is the faithful embodiment of the classic Valencian menu, some of the winter dishes can also be enjoyed at other brands in the group, such as the three La Picaeta locations or the recently opened Linaje, Casa Paco Gómez.

These complement the restaurant’s usual menu: rice dishes, spoon stews, meats, market produce and tapas to share. For example: patatas bravas, puchero croquettes or cod fritters to start; meatballs with grandma’s sauce or tempura eggplant to share; and, to follow, a Valencian paella, baked rice, a puchero in two servings or a good aged rib steak. Valencian spoon dishes have returned thanks to taverns like Los Gómez, which since 1989 has offered honest, close, locally sourced food and service. Because everything comes back around, but someone always has to take the step and set the example.
