Álvaro Calzada, chef at the Petraher restaurant in Valencia, has been in charge of preparing this recipe that incorporates some Arabic nuances. This forms part of the initiative “Las 4 estaciones de la terreta” (The 4 seasons of the land) with which ‘Mi Cub’ promotes Valencian gastronomy.
With “The 4 Seasons of the Terreta” Mi Cub celebrates the arrival of a new season and a new dish to its menu, always created by experts and with local products. It is something that seeks to highlight the traditional dishes from every corner of the Valencian Community, giving them a special and different touch. And this summer it is the turn of the brascada brochette. A reinvention of the traditional Valencian sandwich to which chef Álvaro Calzada of the Petraher restaurant has given an innovative touch with surprising results.
Thus, in addition to the traditional ingredients of this preparation, which combines beef with onion and ham, other ingredients such as Cecina de León, tomato powder, harissa and cinnamon have been added. Ingredients with which Calzada wanted to highlight the influence of Arab cuisine on our gastronomy.
Like every season, Mi Cub is committed to incorporating quality products in its menu, without losing its proximity. In fact, a large part of the menu is made with products that are purchased daily from the stalls in the Colón Market itself.
Anabel Navas, director of Mi Cub, is happy with this new dish because “I’ve always loved brascada but we are reinventing traditional Valencian cuisine and in the form of a brochette it is a different and delicious option”, she explains and adds: “it is a tribute to brascada and to our Arab origins and we are known for always trying to value what is ours, what is authentic, what is from our land”.
And as in every season, this tapa can be paired with a Turia beer, a Valencian beer that stands out for its rich aroma and citrus notes, which makes it an ideal accompaniment for this snack.
