‘MI CUB’ RECOVERS THE VALENCIAN WHITE SWEET POTATO!

Ana Cocinitas has been in charge of preparing the new recipe which is part of ‘Las cuatro estaciones de la terreta’ (‘The four seasons of the land’) and which vindicates  Valencian and seasonal product too. This autumn, Mi Cub’s menu already has a protagonist. It is the Valencian white sweet potato, the main ingredient of the recipe created, expressly for the occasion, by the well-known instagrammer Ana Cocinitas. A dish, ‘Boniatos bravos con alioli de mandarina(sweet potatoes with mandarin aioli ), which from today can be tasted at the restaurant, located in the Mercado de Colón, thanks to the initiative of ‘Las cuatro estaciones de la terreta’ (The four seasons of the land), which promotes Valencian and local produce.

For Ana Cocinitas: “This dish comes from my passion for the products of our land. The white sweet potato, with its natural sweetness, combines perfectly with the fresh acidity of the mandarin, and the aioli adds a creamy touch that rounds off the flavour. This dish not only celebrates autumn, but also the power of quality, local ingredients.

The event was also attended by Aurelio Comes, from Frutas y Verduras Fina, who highlighted the properties of the variety presented, as it is more difficult to grow and has a special flavour and texture: “The one known by people as orange sweet potato is actually sweet potato. This really is sweet potato and it is grown in the Valencia and Murcia regions. It is an exceptional product and I like to grow it because it is important to go for local products, those that have always been grown on the land, which not only provide flavour, but also quality and sustainability’.

For her part, Anabel Navas, director of ‘Mi Cub’, has expressed her satisfaction with the fact that Ana Cocinitas is once again working on the restaurant’s menu. It is worth remembering that a few years ago the instagrammer created “the Valencian hamburger”, which instead of beef had figatell. Today, this is still one of the most popular dishes among Mi Cub’s customers.

We are delighted to recover products that were being lost. Very few people know that the white sweet potato exists and that, what’s more, it is Valencian. With this collaboration, we seek to continue supporting local producers and offering an authentic culinary experience and we do it, on this occasion, with even more enthusiasm, by doing it with Aurelio, who every day brings us fruit and vegetables to our premises and, by the way, has lunch with us too”, Navas pointed out.

In this case, moreover, we wanted to work on a recipe that would go perfectly with the Turia beer, which stands out for its great aromatic richness and citrus notes.

Thus, with this new recipe, ‘Mi Cub’ continues its commitment to Valencian and seasonal gastronomy, inviting everyone to enjoy the most representative flavours of the land in the heart of the emblematic ‘Mercat  de Colón’.
