‘ESGARRAET ‘ WITH PILPIL OF WHITEBAIT AND VALENCIAN MUSSELS WILL BE THE STAR DISH AT ‘MI CUB’  (MERCADO DE COLÓN) IN VALENCIA THIS SUMMER!

Esgarraet with pilpil of whitebait and Valencian mussels can now be enjoyed as another menu item. This is a creative recipe from Salva Barberá of the Tabick Lounge restaurant. A new culinary offering arrives at ‘Mi Cub’ this season. It’s “esgarraet with pilpil of whitebait and Valencian mussels,” which can be enjoyed starting this weekend at the only establishment in the ‘Mercado de Colón’ that showcases Valencian produce.

All of its suppliers are local merchants, ensuring the freshest produce. Thanks to the “Four Seasons of the Terreta” initiative, which promotes Valencian and local produce, you can enjoy a tapa where tradition and innovation merge thanks to the creativity of Salva Barberá of the Tabick Lounge restaurant in Llombai.

As every season, ‘Mi Cub’ focuses on quality, local produce from the region. In this case, with a purely Valencian recipe, to which the chef has given a Mediterranean touch with the clóchina and added a special touch with the pil pil sauce. For Salva Barberá, “the marine touches I’ve incorporated into the recipe give it an even more Valencian personality and a very savoury flavor without detracting from the esgarraet. A very fresh and summery tapa with which we wanted to revive a dish so typical of our own region.”

For her part, Anabel Navas, director of ‘Mi Cub’, expressed her satisfaction with this new offering because “we continue our tradition of working with traditional recipes, always giving them a gastronomically different twist. Of course, respecting local and locally sourced produce. In this case, both the esgarreat and the clóchina are examples of pure Mediterranean cuisine.”

As with every season, this tapa can be paired with Turia Beer, a Valencian beer noted for its rich aroma and citrus notes, making it an ideal accompaniment to this appetizer.This initiative is part of the Four Seasons of La Terreta (The Four Seasons of La Terreta). A series of gastronomic initiatives launched by ‘Mi Cub’ to coincide with the different seasons of the year, the goal of which is none other than to highlight local and seasonal produce.
