This season, the Cruz Pampa restaurant introduces fresher recipes to complement the meat experience, which is its main product. In addition, it updates its pairings and announces a new experience that will soon arrive at the restaurant and put the customer at the chef’s service.

Regarding the two seasonal dishes arriving at the restaurant, they are proposals that combine fruit and vegetables. The first is the roasted orange salad, a dish that introduces a fresher profile within the grill restaurant’s usual offering. Made with seasonal Valencian orange, it mixes a base of mixed greens, goat cheese, orange grilled over the coals, and, as an accompaniment, a vinaigrette made from the same citrus fruit. An option designed to balance the experience and accompany the meats with a lighter product. The second is the grilled seasonal vegetables, which reinforces the commitment to local produce and expands the options for those looking for vegetable-based proposals without sacrificing the flavor of the grill.

Exclusive Pairings
Cruz Pampa expands not only the gastronomic aspect, but also the liquid one. The restaurant on Conde Altea Street, 29, has just established an agreement with an Argentinian boutique winery that will allow them to offer unique wines in the city. This is Che Bandoneón, a project led by winemaker Agustín Sosa, with vineyards located in high-altitude areas of the Uco Valley and in Luján de Cuyo, in Mendoza. This represents a new line of Argentinian wines oriented towards gastronomy: fresher and more versatile profiles. Aged for nine months in oak barrels, the proposal seeks to position itself as an alternative to what already exists within the Spanish market, combining identity, quality, and accessibility for the public.

What’s to Come
Looking ahead to the coming months, Cruz Pampa is already developing a new proposal that will unite two concepts: that of a guided tasting menu and that of the grill. It will be an omakase with meat as the protagonist, which will be inspired by the traditional Japanese omakase in which diners let themselves be guided by the chefs from beginning to end. It will be held once a month and will feature a selection of cuts and techniques that the team is already working on. Through these new additions, Cruz Pampa will continue to extend its woodfire steakhouse offering in Valencia, uniting product, seasonality, and new ways of experiencing the grill.
