The València Central Market Vendors’ Association has published with Editorial Sargantana ‘La cocina del Mercado Central de València’. The book is a compilation of 70 very personal recipes, with the signature of its vendors and customers, to commemorate the 95th anniversary since it opened its doors to the public on 15th January 1928. The Association will present it on Tuesday, 28th November, in an event, open to the public, which will take place at 18.30 in the Palacio de la Exposición.
The publication is an amazing collaboration of talented professionals and great friends of the Central Market, such as the writer Rafa Lahuerta, who wrote the prologue to the book and put the Market at the centre of the story in his successful book; ‘Noruega’. Also, the project involved the chef and gastronomic stylist Bárbara Amorós, whose contribution has been essential in the revision of the recipes. The team of nutritionists from the Clinics of the Catholic University of Valencia have incorporated information on nutrition and allergens into each recipe. And Antonio Cortes has contributed his beautiful photographs to the edition of this publication. As a result, this book is somewhat a personal diary gifted to the Valencian community. Indeed, it is a story book of recipes.
The book encourages everyone to make the most of the hundreds of ingredients that can be bought at the stalls of the Central Market. They are also an invitation to delve into the essence of the city through its gastronomy. As Rafa Lahuerta says in the prologue, “There are a thousand ways of getting to know València, but none as exact and precise as immersing oneself in the ‘Mercat Central’ on any given morning“.
