VALENCIA’S SUMMER REFUGE: WHY VERMÚDEZ IN RUZAFA IS THE PLACE TO BE THIS JULY!

Eleven years into its life on Gran Vía Germanías, ‘Vermúdez’ has earned something most restaurants never quite manage: a reputation that holds up. The Ruzafa restaurant has long been known for its tapas and sharing plates, and this summer it is leaning fully into that identity with a renewed off menu suggestions list built around fresh, light, seasonal ingredients designed for the hottest months of the year. The result is one of the most versatile dining spots in central Valencia right now, and with the ‘Feria de Julio’ in full swing across the city, the timing could not be better.

A Space for Every Hour

One of Vermúdez’s most practical strengths has always been its hours. The restaurant serves lunch from 13.00h to 16.00h and dinner from 19.00h to 23.30h, covering both the early diners and those arriving straight from work for an afterwork drink or meal, without the rigid kitchen cut offs that make so many Valencia restaurants difficult to fit around a real schedule. Whether you are planning a long Sunday lunch, a midweek dinner with friends, or a quick drink at the bar before heading somewhere else, Vermúdez accommodates all of it without feeling like it is stretching itself across too many functions.

What’s New This Summer

The new off menu suggestions are available on a rotating basis from July 9, following the pattern of any good market driven kitchen, meaning no two visits are guaranteed to look exactly the same. The approach is deliberate: Vermúdez wants to give regulars a reason to come back more than once this season, and the rotating format delivers that without making the core menu feel unstable.

Among the new seasonal highlights, seafood lovers will find a prawn carpaccio with a reduction made from the prawn heads and pine nuts, while those after a house classic can still order La Gilda Vermúdez, the restaurant’s own take on one of Spain’s most traditional aperitivos. For dessert, the most original addition is a horchata torrija served with hazelnut ice cream, a genuinely Valencian twist on a classic Spanish sweet that works particularly well in the summer heat.

Premium Meat from Discarlux

One of the most significant additions this summer is the introduction of premium meat from Discarlux, one of Spain’s most respected meat suppliers. Vermúdez is now serving chuletón de vaca, chistorra de vaca, and madurada picaña, all cooked on the grill to bring out their full flavour. Joining the meat on the grill is Cantabrian octopus, reinforcing the restaurant’s commitment to sourcing top quality national produce from suppliers with genuine reputations in the industry.

Bambalino: The Cocktail Space

What started as a cocktail corner has evolved into a fully realised space within the restaurant, with four private areas designed to feel like the private boxes of a classic theatre: Fashioned, Margarita, Dry Martini, and Negroni. Each is designed for intimacy and works equally well for a small group dinner or a quiet drink after eating.

The cocktail bar operates independently from the food service on Thursday evenings through Saturday across both lunch and dinner sittings, and crucially, it is not necessary to have eaten at the restaurant to sit at the bar or at one of Bambalino’s tables. The six cocktails currently on the menu cover a solid range: a Whiskey Sour with yuzu liqueur, a Paloma built on tequila and grapefruit soda, a Pink Lady mixing gin with fruit purée, a Moscow Mule, a Dark and Stormy with Bumbu rum, and the house Espresso Vermúdez for those who want their coffee and their cocktail in the same glass.

Eleven Years and Still Relevant

After eleven years of operation in Ruzafa, Vermúdez has continued to reinvent itself each season while keeping the core philosophy intact: quality sharing plates, broad opening hours, and a space that works for friends, families, and solo diners equally well. In a neighbourhood that has changed dramatically over the past decade and where new openings come and go with some regularity, that kind of consistency is its own form of achievement.

With its location on Gran Vía Germanías, Vermúdez positions itself as the ideal stopping point for anyone planning activities in the centre of Valencia this summer, particularly during the ‘Feria de Julio’. The food is good, the hours are generous, and the room has enough energy to feel like somewhere rather than just somewhere to eat. For a city that takes its restaurants seriously, Vermúdez continues to earn its place among the one’s worth returning to.
