Amadeo Faus and Alfredo Martínez via ‘NPQ editores’ have recently published ‘Paellas y Arroces Valencianos’ bringing classic paella and Valencian and Mediterranean cuisine to everyone.
The owner of two restaurants in Gandia and Andorra, Faus also has a YouTube channel where he teaches viewers how to cook the food he grew up loving through his childhood in Gandia. Faus and Martínez are also dedicated to eating local foods and foods that were ethically grown, encouraging viewers and readers to follow suit.
Their goal with this cookbook is to bring back to life the old classic dishes that tell the story of Valencian cuisine. The cookbook, in that way, is not just any cookbook, but something akin to a history book for the foods of this region.
Through more than 60 Mediterranean-Valencian recipes, Faus and Martínez detail the rich history of paella and other dishes, while introducing new dishes onto the scene. Both chefs support various groups that encourage sustainable food and living, and make known in their book the ways everyone can eat healthier and more sustainably. Having grown up with a great love for food and hospitality, this duo’s cookbook reflects the heart and soul not only of Valencian cuisine, but also their own personal loves for the dishes of their home.
