SANTA COMPANYA: INTERVIEW WITH OWNER RUFO
1. Tell us something about your background
Since I came to Valencia 15 years ago, I have dedicated myself to the world of cuisine in a diverse manner via restaurants, catering and bars. First-hand, I have seen how Valencia gastronomy has really developed, paying special attention to the world of wine.
2. How do you find Valencia as a place to live?
Valencia is an ideal place for people who enjoy fine dining. The climate is perfect for chilling out on a terrace with a good wine and quality tapas, whether they are from the earth or from the sea. At the moment, it is a very active city with a lot of attractive choices & offers in the world of culture, sport and gastronomy.
3. Could you explain the concept of Santa Companya
La Santa Companya is a wine & tapas bar, with more than 15 years experience, where you can learn to compartir (share) with friends or as couples. Savour the atmosphere at the long bar or at tables with wines that we can recommend to accompany your tapas that are homemade in a hip yet warm environment.
4. Are there any tapas and desserts you would recommend?
If you come to visit us you can find typical tapas like Jamon Iberico, ‘Cecina de León’ (salted meat), tablas of cheese, Iberian sausages, products from the huerta (market garden) of Valencia as well as our own particular tapas. We create our own desserts like “Textura de chocolate” or “Falso Tomate Valenciano”.
5. What wines can we enjoy here?
Wines are the soul of La Santa Companya. We pay special attention to natural wines and small companies, including national and international ones, without forgetting classic D.O. like Rioja, Ribera del Duero among others. We try to represent the work of viticulturists from other regions of Spain.
