‘TIMOTEO’ FLAUNTS ITS FIRST REPSOL SUN, NOW ILLUMINATING THE ARRANCAPINS NEIGHBOURHOOD!

The restaurant has been recognized with the prestigious gastronomic guide’s distinction in the bars category. The Repsol Guide describes Timoteo as “a modern yet welcoming place, ideal for tapas with friends.” The partners of Timoteo are Fernando Rico, David Sánchez, Pablo Coperias, and Chimo Rodrigo.

A new sun shines in the city of Valencia: it is Timoteo’s. The prestigious Repsol Guide has just announced its new ‘Suns’ in this special spring 2026 edition. The restaurant located at Calle Marqués de Zenete, 11, in the central neighbourhood of Arrancapins, has been one of the award winners in the bars category. The rich selection of tapas, presented in a groundbreaking way and very different from classic proposals, is the most characteristic aspect of this young restaurant.

In this way, Timoteo adds another award to its short career. Last October, Timoteo’s patatas bravas were crowned for the second consecutive time as the best in Valencia according to the Bravas Fest attendees. They are made with Jabugo chorizo marmalade and grandma’s ali oli. This is the star dish of the house, in addition to many others such as the truffled grilled cheese sandwich, the tortilla with brie cheese and crispy León cured beef, the flame-grilled eggplant, the sobrasada, blue cheese and caramelized onion croquette, or the cuttlefish with mayonnaise.

Timoteo is a restaurant that moved from a previous location, where it was already called Timoteo Misionero, and reformulated its concept to make it more current. All this, thanks to the union of four young partners, who were very clear about what they expected from the new venue: we are talking about Fernando Rico, Pablo Coperias, David Sánchez and Chimo Rodrigo, eager to do the same as always, but a little better.

For the four partners, receiving the ‘sun’ is “an enormous joy”. And they add: “Timoteo was born with the idea of being a close and honest place, where people felt at home, and having that recognized is very valuable for us. If, in addition, a recognition like this arrives… all the better. Now, to continue working the same both in Timoteo and in Teodora, our next opening in which we have put a lot of enthusiasm.”

The Suns have been distinctions of the Repsol Guide since 2021, when the publication set out to reward all those gastronomic establishments that managed to combine a high-quality proposal with affordable prices. Unlike the Repsol Suns, perhaps better known among the public, these new awards are aimed at broad, varied and accessible formats. It is highly valued that the culinary style is casual, but rooted in the territory, and the good service. In this sense, the Repsol Guide describes Timoteo as “a modern and at the same time welcoming place yhat can be the ideal place to eat tapas with friends. Fusion of culinary traditions from all over the world with a contemporary touch in the form of a daily menu and for groups.”

The ‘sun’ achieved at Timoteo comes at a perfect time to continue betting on this gastronomic format. In a few weeks, ‘Teodora’ will see the light, a restaurant owned by the same partners, but located in a different neighbourhood yet to be revealed. It will maintain a continuity with Timoteo, taking another step further in culinary quality, but without losing contact with the everyday diner. Well-made dishes, without unnecessary complications and with attention to detail. The arrival of Teodora is not looking for big headlines, but to add a new space where to continue doing things as they know: with honesty, closeness and connecting with people, inside and outside the neighbourhood.

The philosophy of Timoteo is that of a modernized, but easy and everyday bar, where you can’t go wrong no matter who you go with, because it does not impose codes or require you to pretend. Its cuisine starts from a clear idea: not to invent anything, but to do it with more love. Good product, human treatment and simple experience. Accessible average price (€25-30), which is made up of dishes designed to share. An uncomplicated way of understanding life that continues to grow in the city and that now, in addition, shines with a Repsol sun.
