AUTHOR AND CHEF JOSÉ RODRÍGUEZ: “Valencian cuisine will always be linked to paella and rice in general, an essential ingredient in its gastronomy and which holds the D.O. Arròs de València. But Valencian cuisine offers a wide variety of dishes thanks to its own ingredients, such as fish and seafood from our Mediterranean Sea and fruit and vegetables from the Valencian market garden, where we can also find products with D.O. such as the Valencian Tiger Nut, the Utiel-Requena wines and cavas or the persimmon from Ribera del Xúquer. Thanks to all these products, Valencian gastronomy is very diverse, and visiting the regions of the province and tasting their typical dishes and wines is something extraordinary. Rice dishes in the regions of l’Horta, la Ribera and la Safor, pots in the Serranos, stews in Utiel, baked rice in Xàtiva, sausages in Ontinyent or Requena and sweets in Casinos, among many other gastronomic attractions. Always from the point of view of an amateur cook, and not a professional chef, in this book I wanted to collect a small sample of our gastronomy, with easy to prepare recipes to bring home all those flavours that surround us.”
